One of the reasons The Sugar Studio began was because of the many request to learn how to make our signature ruffle cake. (That and a desperate void in the Peninsula for modern cake design classes for passionate ‘almost professionals’. )
Well now there is a new ruffle cake technique taking over the cake design world. Let’s call this ruffle 2.0. The traditional ruffle technique uses a large petal tip and requires you to hold the piping bag at a 90 degree angle while piping from the bottom of the cake to the top. Ruffle 2.0 uses a leaf tip and requires you to hold piping bag at 45 degree angle while piping sideways on the cake.
We typically tell students to start the first row of ruffles from the bottom of the cake and work toward the top. The beauty of this design is it really is fool-proof and makes everyone look like a pro. It’s a very forgiving design and great for all skill levels.
